The reason I am obsessed with these cookies is because they have a tonne of fibre which is good for digestive health. These ingredients work together to create a delicious and nutritious cookie that you can enjoy guilt-free. The ripe bananas provide natural sweetness and moisture, while the oats add a chewy texture and fibre. Honey serves as a natural sweetener, however you should put it last after tasting usually the bananas and cinnamon provide sufficient, sweetening and coconut oil helps to bind everything together.

Step-by-Step Guide to Making Healthy Banana Oatmeal Cookies

Step 1: Preheat the Oven and Prepare the Baking Sheet

Start by preheating your oven to 180°C. While the oven is heating up, line a baking sheet with parchment paper or lightly grease it with coconut oil to prevent the cookies from sticking.

Step 2: Mash the Ripe Bananas

In a mixing bowl, mash the ripe bananas using a fork or a potato masher until they are smooth and creamy. Make sure there are no lumps remaining.

Step 3: Add the Oats, Honey, Coconut Oil, and Raisins

To the mashed bananas, add the rest of the ingredients egg, oats, honey, coconut oil, and raisins. Mix well until all the ingredients are thoroughly combined. The mixture should have a sticky texture.

Step 4: Form the Cookie Dough

Using a spoon or an ice cream scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet. Leave enough space between each cookie to allow for spreading during baking.

Step 5: Flatten the Cookies

Gently flatten each cookie using the back of a spoon or the palm of your hand. This will ensure that the cookies bake evenly and have a uniform shape.

Step 6: Bake the Cookies

Place the baking sheet in the preheated oven and bake the cookies for 12-15 minutes, or until they are golden brown around the edges. Keep an eye on them to prevent over-browning.

Step 7: Cool and Enjoy

Once the cookies are baked, remove them from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely. Once cooled, you can enjoy these healthy banana oatmeal cookies as a snack or dessert.

Tips for Perfect Healthy Banana Oatmeal Cookies

To ensure your healthy banana oatmeal cookies turn out perfectly every time, here are some helpful tips:

  1. Use ripe bananas: The riper the bananas, the sweeter and more flavourful your cookies will be. Look for bananas with brown spots on the peel for the best results.
  2. Use rolled oats: Rolled oats work best in this recipe as they provide a chewy texture. Avoid using instant oats, as they will result in a softer cookie.
  3. Experiment with mix-ins: While this recipe includes raisins, feel free to get creative and add your u mix-ins. Chocolate chips, chopped nuts, or dried cranberries are all excellent options.
  4. Watch the baking time: Keep a close eye on the cookies as they bake, as they can go from perfectly golden to overdone quickly. Remove them from the oven when they are golden brown around the edges but still slightly soft in the center.
